Just what the doctor ordered these chilly winter nights. This is a lot easier to make if you have an immersion blender. Go get one.
INGREDIENTS
1 Tbsp olive oil
2 15-oz cans black beans, drained
2 1/2 c water
2 c diced onions
1 tsp chili powder
1/2 tsp ground cumin
1/4 tsp hot sauce, or more to taste
1 garlic clove, minced
6 oz. turkey kielbasa, diced
INSTRUCTIONS
- Heat olive oil in a Dutch oven over medium-high heat. Add the onion and sauté 4 minutes or until soft.
- Add everything except the kielbasa, bring it to a boil, cover, reduce the heat, and simmer 5 minutes.
- Give it a few spins with your trusty immersion blender until it is your preferred consistency (I like a few whole beans).
- Add kielbasa and simmer 1 minute or until heated.
