Spacer Caramelized Onions

This is one of those recipes that always takes me way longer than it says it's supposed to. You may be get better results if you don't use a nonstick pan (food colors better), but you may need more olive oil that way.

INGREDIENTS
3 c vertically sliced onion (any variety)
1 1/2 tsp olive oil
cooking spray

INSTRUCTIONS

  1. Heat oil in a 12-inch nonstick skillet coated with cooking spray over medium-high heat.
  2. Add sliced onion and cook 20-25 minutes, stirring frequently, until golden brown.

Yields 1 cup
