INGREDIENTS
1 Tbsp butter
1 medium red bell pepper, chopped
3 scallions, chopped
4 cups fresh broccoli, chopped
1 14 1/2-ounce can chicken broth
1 cup light cream or half-and-half
3 cups medium noodles
1 1/2 cups cooked chicken
INSTRUCTIONS
- In a large skillet, melt butter over medium-high heat.
- Add pepper, scallions, and broccoli. Cook, stirring occasionally, about five minutes.
- Stir in chicken broth, cream, noodes, and chicken. Heat to boiling.
- Reduce heat to low, cover, and simmer 25 to 30 minutes or until noodles are tender.
