Spacer Salad with Walnut-Mustard Dressing

1 Tbsp mayonnaise (regular or low-fat)
1 Tbsp fresh lemon juice
1 Tbsp walnut or olive oil
2 tsp grainy Dijon mustard
1/2 head radicchio, torn into bite-size pieces
1/2 head Bibb lettuce, torn into bite-size pieces
1/4 c coarsely chopped walnuts, toasted


  1. Combine first four ingredients in a small bowl. Whisk well to blend, then season to taste with salt and pepper.
  2. Combine radicchio and lettuce in a large bowl. Add dressing; toss to coat evenly.
  3. Divide salad between two plates. Sprinkle with walnuts and serve.
