2 Tbsp fresh lemon juice
2 Tbsp balsamic vinegar
2 tsp country-style Dijon mustard
1/2 c extra-virgin olive oil
1 6-oz. bag fresh baby spinach
1 head radicchio, torn into bite-sized pieces
8 oz. button mushrooms, sliced
2 green onions, minced
1/2 c chopped roasted cashews
- Whisk first three ingredients in a small bowl. Gradually whisk in olive oil. Season dressing to taste with salt and pepper.
- Combine spinach and other ingredients in a large bowl.
- Add dressing to taste; toss to coat.
