Not being fond of raisins, I left them out.
INGREDIENTS
1 1/2 cups all-purpose flour
1/2 cup whole-wheat flour
1/2 cup sugar
2 tsp baking powder
3/4 tsp salt
1/2 tsp ground cinnamon
1 cup orange juice
1/4 cup vegetable oil
1 1/2 tsp grated lemon rind
1 large egg, lightly beaten
1/2 cup golden raisins
Cooking spray
1 Tbsp sugar
INSTRUCTIONS
- Preheat oven to 400 F.
- Combine first 6 ingredients (flours through cinnamon) in a medium bowl, and stir well with a whisk. Make a well in the center of the mixture.
- Combine juice, oil, rind, and egg; add to flour mixture, stirring just until moist. Stir in raisins.
- Spoon batter into 12 muffin cups coated with cooking spray. Sprinkle evenly with 1 Tbsp sugar.
- Bake 20 minutes or until muffins spring back when touched lightly in the center. Remove from pan. Cool completely on a wire rack.
